For this week, I am passing along an email with a collection of recipes for something that many of use probably don't think of for more than topping our tacos and nachos. No, not cheese, but that other dairy comfort food, sour cream. Sour cream is delicious in many recipes and brings a savory and tart flavor to many dishes while adding a creamy texture. Old Fashioned Cabbage Roll Skillet Tricia's Energy Balls
2 cups oats 1 cup peanut butter or nutella 1/2 cup honey 1/4 cup ground flax seed 1/2 cup coconut flakes 1/2 cup chocolate chips Mix this all together in a bowl and shape into balls. Get ready for fall with another easy recipe from Katie's kitchen.
Sweet Potato Hash 1lb ground meat or sausage 2-3 sweet potatoes depending on size 4-5 C kale, stems removed 1/2 chopped onion Microwave sweet potatoes until almost cooked, about 4 min, cut in half and set aside. brown meat until about 75% done. As meat is browning, peel skin off sweet potatoes and chop into bite sized chunks. Add onion to meat and cook until starting to turn translucent. Add kale and cook until wilted. Add sweet potato cubes and cooked until is done. season to taste. It's getting to be that time of year when we are looking for something warm and satisfying to put in our tummies. Ground Beef and Zucchini Stir Fry Enjoy it while you can, fire up the BBQ for a complete easy weeknight meal.
Flat iron steak with vegetable packet 1 - 2 flat iron steaks depending on size and the number of people asparagus mushrooms onion garlic butter Season the steaks as desired and let them sit while you start your BBQ. Cut the asparagus, mushrooms and onion into large pieces. Lay out a piece of foil large enough to be able to fold around the vegetables. Place the vegetables in the center of the packet, season with salt and pepper and place a few bits of butter on top. Fold the foil over and crimp the edges to seal. Once the grill is hot, place the steaks and foil packet on. Cook until the steaks are done, flipping as needed. Cover the steaks for a few minutes off the grill once done and fix a nice little salad on your plate. Take care when opening the foil packet, the steam is hot. Here is a great recipe from Katie.
